RECIPE: Dinner for one on Valentine's Day! (5 quick pasta recipes for Living Single)
If you follow my Instagram, you know I love to provide you with all kinds of quick and easy recipes for any day of the week. And you usually know that my wife, Holley, is both sous-chef and taste tester. But! It’s Valentine’s Day and Holley happens to be working from Lisbon right now! So this means I’ll be watching reruns of Living Single and I get to make my own meal - dinner for one! And apparently, this Valentine’s Day, I’m all about pasta!
I think I’ve settled on this amazing looking Orecchiette with Mixed Greens and Goat Cheese recipe from Giada De Laurentiis at Food Network.
But, below, you’ll find four links to pasta (or pasta-influenced) dinner for one recipes that almost made the cut!
Brown butter butternut squash pasta with pancetta - “This pasta is bursting with huge flavor from the nuttiness of the brown butter, the sweet touch from the butternut squash, to the saltiness of the pancetta. Every single bite is hitting your palate left and right. “ - Quinn
Lemon-garlic shrimp - This isn’t a pasta recipe, but I would have gone ahead and tossed it with angel hair and a bit of sesame chili oil!
Mediterranean grain salad - Same here! I would have used a chewier/crunchier pasta - maybe even penne - and added fresh red pepper flakes.
.Buttered noodles - Come on! This is a classic recipe, and it’s always upgraded with a little sautéed spinach and a single pork chop. Though - take it from me - a single pork chop upgrades anything!
